Coca-Cola cake is a cake, of which the key ingredient is the non-alchoholic drink, Coca-Cola. The cake is covered with a cocoa and Coca-Cola icing.[1]. This cake is commonly used as a snack or dessert.

Similar recipes use other drinks, for example using Sprite makes Sprite cake (Spritekuchen in German). Using Fanta makes Fanta cake (Fantakuchen in German). Using other beverages makes Limokuchen.[2][3][4]

Ingredients (for a 8 to 8 1/2 inches circa baking tray)

Icing (gluten free)

  • 100 g of butter;
  • 30 ml of Coca-Cola,
  • 3 tablespoons of bitter cocoa;
  • the tip of a teaspoon of salt;
  • 200 g of powdered sugar[1].

Instructions

1) Mix the flour, salt, sugar, yeast and bicarbonate in a bowl.

2) Place the butter, Coca-Cola, cocoa and buttermilk/Yogurt in a saucepan.

3) Bring the mixture to a boil, stirring constantly so that no lumps form, then remove from the heat and pour slowly, in a thin stream, onto the flour mixture, stirring vigorously.

4) As soon as the mixture is smooth, add the two eggs.

5) Pour into the buttered mold or covered with baking paper and bake in a preheated oven at 180 degrees for about 40-45 minutes.

6) When it's almost done cooking, prepare the icing: put the butter and Coca-Cola in a saucepan over a low heat, wait until it boils and pour in the cocoa and salt.

7) Remove from the heat and stir well, starting to add the icing sugar.

8) Work with a spatula or spoon until smooth and silky.

9) Pour the warm icing on the cake as soon as you take it out of the oven.

10) Allow to cool and serve.[1]

Notes

  • The cake doesn't taste like Coca-Cola. It tastes like chocolate.
  • The cake can be made with regular Coca-Cola, light, zero and Pepsi.
